How to make Red Velvet Muffins?

A red velvet muffin is nothing more than a chocolate muffin that has been colored with Beetroot puree. The muffins are soft, tender, and have an extra fudgy taste that makes you feel like you are eating dessert instead of a breakfast item!  

This healthy version of Red Velvet Muffin has some great ingredients that make it tasty and healthy like beetroots, Coconut Sugar instead of refined sugar, Coconut Oil instead of Butter and Apple Cider Vinegar for extra goodness. So enjoy this healthy treat with your family and celebrate life!

Ingredients:

  • 1 ½ Cup Flour (1 cup wheat flour + ½ ground oats)
  • 3/4 cup Coconut Sugar
  • 1-1/4 teaspoon Baking powder
  • 2 teaspoons Cocoa Powder
  • 1/4 teaspoon Salt
  • 1/4 cup Coconut Oil
  • 2 Eggs (For eggless cooking replace each egg with ¼ cup yogurt)
  • 1 cup Beetroot puree
  • 1 teaspoon Apple Cider Vinegar
  • Chocolate chips, a handful

Method:

  • These muffins start like any other, with a mixture of cocoa powder, baking powder, flour, and salt to a large bowl.
  • Add sugar (I use brown sugar for this recipe) and choco chips to the mixture and keep aside.
  • Add eggs and coconut oil in a blender and beat it at high speed.
  • Next, add the beetroot puree, milk and blend again.
  • Add vinegar and blend at low speed.
  • Slowly add the batter to the sifted flour mixture.
  • Move the spoon in one direction in order to air the batter.
  • Pour the prepared Muffin batter into the moulds.
  • Preheat oven at 180 C and Bake for 20-30 minutes.
  • Allow the muffins to cool completely before serving.
  • Optional, to decorate the cake, prepare fresh cream.
  • Beat fresh cream in a mixer till it turns fluffy.
  • Decorate the muffins with cream and your favorite fresh fruits.
  • And, you are done, its time to enjoy this delicious treat!
